Instructions:

  1. Sauté the Meat: Heat the cooking oil in a large pot or Dutch oven over medium heat. Add the chorizo and cook until browned and slightly crispy. Remove the chorizo from the pot and set aside.
  2. Brown the Chicken: Add the chicken to the pot and cook until browned on all sides. Remove the chicken and set aside with the chorizo.
  3. Sauté Aromatics: Add the onion and garlic to the pot and sauté until softened, about 3-5 minutes.
  4. Simmer the Sauce: Add the diced tomatoes (undrained), chicken broth, peas, and carrots to the pot. Bring to a simmer and cook for about 10 minutes, allowing the flavors to meld.
  5. Add Rice and Meat: Stir in the uncooked rice, water, salt, and pepper. Add the cooked chorizo and chicken back to the pot.
  6. Cook the Rice: Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is cooked through and the liquid is absorbed.
  7. Fluff and Serve: Once cooked, fluff the rice with a fork and serve hot.
